As a proton user, I believe it only stays encrypted while enroute, but is essentially “open access” after that if your recipient(s) are not also on proton. Proton itself does not retain the data, but if for example you send an email to a gmail user then gmail most likely will, or same for old aol, hotmail, yahoo, etc. 0&0
